What's the difference between micellar casein and just casein?
Good question. In general terms, micellar casein refers to the raw micellar casein protein structure found in raw milk. When left intact, it is that micellar casein structure from the milk protein that we want. Micellar casein is also a complete protein. Whereas casein is different – it can also be known as industrial casein in some circles. The typical industrial casein is a deficient protein lacking the same levels of the essential amino acid methionine and the conditionally essential amino acid cysteine, both of which are reduced/lost in processing of milk into just casein. Those 2 sulfur-containing amino acids play key roles in sustaining your body's immune system not to mention muscle building. Casein is typically made by using acids to destabilize the original micellar structure. As such casein is basically seen as cheap and it is just not the same thing at all as micellar casein. Our micellar casein comes from raw milk, leaving the native micellar casein structures intact as nature intended.*
What's the difference between micellar casein and calcium caseinate or sodium caseinate or potassium caseinate?
Caseinates are usually just caseins treated with an alkalizing mineral (eg: calcium) in order to balance off the acidity of the acid treated casein and to make it more water soluble. (That may be an over simplification, but the point is that caseinate is not a complex branching micellar structure to the same degree as micellar casein is).*
